No Sugar, No Bake Brownie Bites May 12, 2010
I’m posting this one for my sweet friends Melissa, Emily and Margie. My sister made these for the family a couple of weeks ago and they were a hit. So, I made them for Chad, and passed them out to friends both at home and at CrossFit Long Beach. They went very fast–good post workout recovery snack. I hope you like.
Ingredients
- 2 cups almond meal
- 1 cup unsweetened cocoa
- 1/2 tsp salt
- 1 cup unsweetened dates, with seeds removed. If you dates are really dry, you may need a few more.
- 3 tablespoons raw honey (can also use agave nectar but this is much higher on the GI)
- 1/2 cup walnuts, crushed
Instructions
- Put the dates in the food processor and get them all mushy.
- Add the walnuts and pulse until they are in smaller pieces.
- Add the remaining ingredients until the mixture if fully mixed. The texture should be a on the dry side, but if you pinch together it should stick together. If it doesn’t hold together, toss in another date or two.
- Dump mixture in an 8×8 baking pan, cover with parchment/wax paper and press until flat. You can also do this with clean hands, but you do end up with finger prints in the dough…
- Chill for an hour or so, cut into 1" size pieces, cover and store. Put a piece of parchment paper between the layers so they don’t stick together.
The only rule is that if you make them, you must bring me one. Or two.
