Very Easy Roasted Chicken March 30, 2010
This is a family favorite and I’m posting it at my mom’s request:
Ingredients:
- 1 organic whole chicken thawed
- 1 lemon
- Olive oil
- Salt, pepper and garlic powder (feel free to add any additional dry herbs if you have them handy)
- Optional: any fresh herbs like rosemary, thyme, oregano, fresh garlic
Instructions:
- Preheat the oven to 400.
- Take a thawed room-temperature chicken, rinse and pat dry with paper towels.
- Coat inside and outside of the chicken with olive oil then generously sprinkle with salt, pepper, and garlic powder.
- Put in a well-oiled 9×13 pan or cast iron pan (my favorite)
- Take the lemon, wash it and poke it a few times with a fork and stick inside cavity. You can also put garlic cloves and fresh rosemary/thyme inside, too, if you have it.
- Tie up the legs and put chicken in oven for about 75 minutes, depending on the size of the bird. If you do not have a meat thermometer, the best way to tell if the chicken is done is by the look and smell. It should smell really delicious throughout your kitchen/house, and the chicken should look darker golden brown. Also, when you pierce the thigh, the juices should run clear.
- Pull out of the oven, let sit for a 5-10 minutes, slice and enjoy.
