Very Easy Roasted Chicken March 30, 2010

This is a family favorite and I’m posting it at my mom’s request:

Ingredients:

  • 1 organic whole chicken thawed
  • 1 lemon
  • Olive oil
  • Salt, pepper and garlic powder (feel free to add any additional dry herbs if you have them handy)
  • Optional: any fresh herbs like rosemary, thyme, oregano, fresh garlic

Instructions:

  1. Preheat the oven to 400.
  2. Take a thawed room-temperature chicken, rinse and pat dry with paper towels.
  3. Coat inside and outside of the chicken with olive oil then generously sprinkle with salt, pepper, and garlic powder.
  4. Put in a well-oiled 9×13 pan or cast iron pan (my favorite)
  5. Take the lemon, wash it and poke it a few times with a fork and stick inside cavity. You can also put garlic cloves and fresh rosemary/thyme inside, too, if you have it.
  6. Tie up the legs and put chicken in oven for about 75 minutes, depending on the size of the bird.  If you do not have a meat thermometer, the best way to tell if the chicken is done is by the look and smell. It should smell really delicious throughout your kitchen/house, and the chicken should look darker golden brown. Also, when you pierce the thigh, the juices should run clear.
  7. Pull out of the oven, let sit for a 5-10 minutes, slice and enjoy.
