Baked Spinach & Gruyere Redux March 30, 2010

I’ve been working on a quick version of this Cosmic Rhino recipe and finally figured out the right formula. This version has no cream and uses Trader Joe’s frozen vegetables so no chopping required. I’ve been making this on Sunday so that we have breakfasts or lunches for the next couple of days already made.

Ingredients:

  • 2 bags of TJs frozen spinach - I used the 10oz pesticide-free bag
  • 1 bag of TJs frozed roasted bell peppers (red,  yellow, green) and onions.
  • 1 tsp garlic powder
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp salt (do not need if you add the spicy meat below)
  • 2 cups of TJs shredded swiss/gruyere
  • 8 eggs - cracked and mixed well with a whip or fork. If you add the meat below, do 9 eggs.
  • Optional - 1/2 lb of TJs grass-fed ground beef seasoned with TJs taco seasoning. We cooked up the whole pound the night before so I used the leftovers. You can also use other types of well-seasoned meats like ground turkey. Or no meat works great, too. A note on TJ’s Taco Seasoning - it says use a whole packet on a pound of meat but this is crazy salty and spicy. So we use 1/2 packet instead and it’s perfect.

Instructions:

  1. Preheat oven to 350.
  2. Thaw and drain spinach and peppers really well.
  3. In a big mixing bowl, mix all of the ingredients well.
  4. Spread into a 9×13 baking pan which has been greased well with some olive oil.
  5. Cook for about 40-45 minutes, until the middle is nice and firm. All ovens are a little different so if it starts smelling really good, check on it.
  6. Let sit for about 5 minutes and serve warm.
  7. Once cooled, you can also store in meal size portions and have a nice breakfast or lunch ready to go.In fact, I’m about to enjoy mine right now. :)
