Cucumber Salad from the Homan family April 20, 2009
This recipe is from the kitchen of Mrs. Homan who is a legend in my family (her cherry cake is to die for!). It’s a real treat when we get an actual recipe from her because most things she just whips up without a recipe.
Ingredients:
- 1 medium cucumber, sliced thin
- 1 tsp salt
- 1/2 cup sour cream (or Greek-style yogurt)
- 1 tbsp vinegar (omit if using yogurt - see note below)
- 1 to 2 drops Tobasco sauce
- 2 tbsp chopped chives
- 1 tsp dill seed
- dash of pepper
- Note: I also subbed out whole milk Greek style yogurt for the sour cream and it was delicious as well! But, if you do, be sure to omit the vinegar. The yogurt has enough zing on its own.
Instructions:
Sprinkle sliced cucumbers with salt, let stand 30 minutes. Drain thoroughly. Combine sour cream, vinegar, Tobasco, chives, dill seed and pepper. Pour over cucumbers. Chill well before serving, about 30 minutes.
