Berry Smoothie (with kale and carrots) August 6, 2007

CR Mom wants another smoothie recipe and I must oblige. She’s me mum, after all.

This berry smoothie is a great way to get veggies, especially if the recipients (kids, boyfriends, husbands, little sisters, etc.) do not like veggies. Blueberries, flax seed, kale…you can’t ask for  more super-foods in a smoothie! It tastes good, too.

Ingredients:

  • 1 large carrot
  • 2-3 leaves of kale (lacinato version shown above). Can also use chard, or even a few heads of broccoli.
  • 1 cup cold water or orange juice (OJ works best when you’re trying to mask the flavor, but it does add calories)
  • 1/2 or whole banana (frozen works best) - optional but is really helpful in masking any veggie flavor
  • 2 cups frozen berries of any kind, but go with purple in color when you’re trying to sneak in the vegetables
  • tofu - 1/6 of carton
  • 5-6 ice cubes
  • 3 tablespoons ground flax seed

Throw everything in a blender and mix very well. Drink immediately. Makes 1 large serving, or 2-3 small servings.

Tip: My mom and sister have a garden full of kale so they are blending the fresh kale with water and freezing in ice cube trays for future smoothie usage. Brilliant!

    Thanks for the praise! I just had another smoothie! It is so filling and satisfying! The reward is that I feel so much energy and I am feeding my body nutrients such as calcium for strong bones and antioxidants for wholeness. I have never felt better! It is fun to have our “research kitchen” assist you on your website. We had a critter in the garden last night that started to eat the kale so we beat him to it and picked it! We will process it tomorrow, FYI.
