Kale Smoothie (don’t be scared) August 2, 2007
A kale smoothie is the perfect solution when you know you simply have not had enough dark leafy greens in your diet and your body is screaming for them. Isn’t it pretty?
Let me start by saying that you’ve got to go into this one thinking of it as medicine, which is precisely the advice my friend Cathy gave me when I tried it the first time. If you are expecting a Berry Pizazz Smoothie at Jamba Juice, it’s not going to work. So try the medicine approach like I did and the truth is I actually like it!
Ingredients:
- 2-3 leaves of kale (I like the Lacinato variety, usually found at Wild Oats or Whole Foods)
- 1/2 cup pineapple (fresh if you have it, frozen is good too, hard to get locally though)
- 4-5 cubes of ice
- 8-12 ounces of ice cold water, depending on how thick you want it
- 1/6 carton of organic tofu (optional for those who want/need protein)
Instructions:
Throw it all in a blender and guzzle it down. I actually like it. The pineapple gives it a little sweetness to cut the green factor and the digestive enzymes are a bonus!
A tip: Never substitute arugula for kale. I tried it last week and, wow, was that nasty!
