Veggie Samosas April 19, 2007

As promised, here is my first Indian food post from Hipcooks cooking class (which I highly recommend - so fun!). As a healthier option, we baked the samosas instead of frying, and they were fabulous! Here’s the recipe with a few “Gina” tweaks.

Ingredients:

  • 1 package egg roll wrappers
  • Vegetable oil (if frying)
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 or 2 Serrano chilies, minced
  • 1 tablespoon mustard seeds
  • 1 tsp Garam Masala
  • A dash Turmeric, if desired
  • A dash Chili power, if desired
  • A dash Paprika, if desired

Super Easy Cabbage Salad April 16, 2007

This recipe comes from my new friend Myriam Joseph, who is the coolest in all ways. She whipped this up in seconds during our Palm Spring trip last weekend:

Ingredients:

  • 1 medium head of green or red cabbage, shredded/chopped (however you like it)
  • Some extra virgin olive oil>
  • Some rice wine vinegar
  • Salt/pepper to taste
  • You really can add anything else that appeals to you - lime juice? seasonings? red bell pepper? It’s all going to be good.

Roasted Broccoli with Garlic & Ginger April 5, 2007

Having trouble getting enough greens because you don’t enjoy them? This one will change your mind. And it’s easy! This recipe comes from my sister JoAnna, who is learning to cook. It’s now a family favorite! This makes 4 servings.

Ingredients:

  • 1 1/2 pounds broccoli, cut into long spears
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon finely chopped fresh ginger
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper
  • Lemon wedges, for serving

“Cream” of Broccoli Soup April 3, 2007

My girl Emily and I tag-teamed on this. This hearty, delicious soup is perfect for cooler evenings. Don’t be afraid of the green. It’s delicious!

Ingredients:

  • 12-oz fresh or frozen broccoli, chopped
  • 1 large russet potato, cut into ½ in. cubes (or 4-5 small red potatoes), skin on
  • 1 medium onion, chopped olive oil (approx. 6 Tbl.)
  • 2 ½ c. low-sodium organic chicken or vegetable broth
  • 6 medium garlic cloves, minced 5-oz (one single serving container)
  • 2 Tbl nonfat greek-style yogurt (I prefer “Fageâ€? brand)
  • Dijon mustard
  • Freshly ground black pepper (to taste)
